Frugal Friday: Cheap Breakfast/Lunch/Dinner

The other day, my hubby & I decided to get creative in the kitchen (for dinner people, get your mind outta the gutter!). We did a quick inventory of what we had on hand, and here is what we came up with, that I think we decided cost us less than $5 for the whole meal, give or take a little... It's not something that hasn't been done before, but here ya go...

My Cheap Meal on the Fly.... Breakfast (lunch or dinner) Burritos

1/2 large sweet onion
1 can mushroom pieces
3 tablespoons oil (we had olive oil on hand)
4-5 medium potatoes (we used red)
3-4 eggs
splash of milk
about a cup of shredded cheese
8 flour tortillas
salt & pepper

  • Heat the oil in a large fry pan or wok style pan.
  • Dice the potatoes (skin & all) into about 1/2 inch pieces & throw in the hot oil to cook.
  • Dice up the onions and mushrooms & throw them in the pan to cook with the potatoes.
  • Cover the pan and allow to cook, stirring occasionally to keep the potatoes from sticking.
  • In a separate pan scramble the eggs with a splash of milk.
  • Heat your tortillas a bit, we used the microwave.
  • Now, once your potatoes are finished cooking you can assemble.
  • Lay out a tortilla and place about 1/4 -1/3 cup of potatoes in the center.
  • Add about 1/4 cup of scrambled eggs.
  • Sprinkle with a little cheese and season a bit with the salt & pepper.
  • Wrap it up and eat!

The kids loved it and it was cheap and easy to make! And we usually have all of those ingredients on hand, so it's a meal that is readily available pretty much any time! Not to mention you can add other stuff to it to make it even tastier! If I had had some peppers, those would have gone in there, and it would be awesome with bacon or sausage!
