Recipe Corner: Hot Chocolate Mix

Every year for as long as I can remember my mom has made her own hot chocolate mix. And it is GOOD! One of my fondest memories from winters in Northern Illinois was coming in from playing in the snow with my brothers and mom would have popcorn and hot chocolate ready for us. It warmed us up from the inside out and was oh so chocolatey. We also figured out how to make the itty bitty crunchy marshmallows that you might find in the commercial hot chocolate mixes! So I decided that I would share this divine recipe and let you also partake in its delectability! Here it is:

Mom's Home Made Hot Chocolate Mix
1 large box of powdered milk
1-2 pound bag of powdered sugar
1 canister of cocoa powder
1 larger canister of non-dairy creamer

Combine all ingredients in a large plastic container and shake well. For an individual serving, mix 1/3 cup of powder with 8 ounces hot water or for an even creamier cup of cocoa, make it with hot milk!

Now, I also said we discovered the secret to the itty bitty crunchy marshmallows that you find in the commercial mixes.... dehydrate mini marshmallows with a food dehydrator! Then add to your cup of hot chocolate. Store in a sealed container in a cool dry place.
